Avoid playing on brand new strings. I had always liked the fresh, shiny sound of new strings, and tended to restring just before recording, thinking that I was getting the cleanest acoustic guitar sound. But you're right: Brand new strings need to be mellowed first by a couple hours of playing. A cleaner, and better sounding all-around, guitar track is the result.
